Whim Wham Weekend #5


Ahhh. Weekend is over. Literally, one of the most relaxing, ahem, lazy weekends ever. Glory! Sleep, bubble baths, books, movies, food and not much else. Maybe a little cleaning and a bit of laundry.
Plus a husband who kind of thinks I'm cute when I'm coughing all over him. kind of.
I feel rested and like I've totally kicked that darn flu straight to the gonads.

P.S. When your thermometer ranges in temperature readings between 102-95 degrees, you are either super sick and/or the cheapo Target thermometers are in fact, worth $1 and that's about it.

I'm ready to live this week!

Friday Favorites: February Flurry


{Dear Oregonians. Yours truly, Snow}

Oregon weather is playing mind games with us. One day it's sunny and the birds are chirping. The next day, hail and snow. I think the birds flew south again, they are kinda mad at the weather too. And, "we like to put birds on things and call it art", so, they might be forming some sort of mutiny on us Oregonians, regardless.

You know what a snow day always does to me? Transforms me into a kid. I'm out there catching snowflakes and cheering on the school closures and delays in my footie pajamas like the best of them. Hello. I am 22 years old going on 12.
Today's Friday Favorites had to be in homage to the white stuff.
{It falls, sticks, melts.}
Life goes on.
But for a few moments it's fun to dream.

Bliss

Last night while Daniel was at the Blazers game, I decided to stay home and relax. Or was forced to relax. By a fever. Decided/Forced. Potato/Potahto.
I think being sick a few weeks ago was the welcome-wagon for this lovely full-blown germ infestation. Oh joy.

So, how did I make myself feel a tiny bit better? A few little things of course.

Crave: Mac and Cheese

Today I want to share one of my favorite recipes. Warning: If you are on any sort of diet, you might want to run away before I tempt you. Hopefully we can still be friends though?

I lovingly refer to this dish as "Crack and Cheese." Like "crack," (I'm only assuming, don't stage an intervention), this dish is addicting and expensive.

Don't fret, it's a "fancier" version of homemade mac & cheese, but extremely easy to whip up, and not that expensive.
It feeds a bunch of people or you can freeze any extra for later if your crowd is a little smaller. Either way, you end up with a whole lot of it. One of my top 10 comfort foods. Ok. Maybe top 20. It's me were talking about, and I love my food. Praise the food gods above, that I have a metabolism. Hopefully it keeps going strong. Bad news my friends if it doesn't. Bad news.

P.S. This is the infamous Martha Stewart version. It might make you infamous too. In a good way. Enjoy!


Martha's Mac & Cheese

a8 tablespoons (1 stick) unsalted butter, plus more for casserole
6 slices white bread, crusts removed, torn into 1/4- to l/2-inch pieces
5 1/2 cups milk
1/2 cup all-purpose flour
2 teaspoons coarse salt, plus more for water
1/4 teaspoon ground nutmeg
1/4 teaspoon freshly ground black pepper
1/4 teaspoon cayenne pepper
4 1/2 cups (about 18 ounces) grated sharp white cheddar cheese
2 cups (about 8 ounces) grated Gruyère or 1 1/4 cups (about 5 ounces) grated Pecorino Romano cheese
1 pound elbow macaroni

1. Preheat oven to 375°F. Butter a 3-quart casserole dish; set aside. Place the bread in a medium bowl. In a small saucepan over medium heat, melt 2 tablespoons butter. Pour the melted butter into the bowl with the bread, and toss. Set the breadcrumbs aside.


2. Warm the milk in a medium saucepan over medium heat. Melt the remaining 6 tablespoons butter in a high-sided skillet over medium heat. When the butter bubbles, add the flour. Cook, stirring, 1 minute.


3. While whisking, slowly pour in the hot milk a little at a time to keep mixture smooth. Continue cooking, whisking constantly, until the mixture bubbles and becomes thick, 8 to 12 minutes.


4. Remove the pan from the heat. Stir in salt, nutmeg, black pepper, cayenne pepper, 3 cups cheddar cheese, and 1 1/2 cups Gruyère (or 1 cup Pecorino Romano); set the cheese sauce aside.


5. Cover a large pot of salted water, and bring to a boil. Cook the macaroni until the outside of pasta is cooked and the inside is underdone, 2 to 3 minutes. Transfer the macaroni to a colander, rinse under cold running water, and drain well. Stir the macaroni into the reserved cheese sauce.


6. Pour the mixture into the prepared dish. Sprinkle the remaining 1 1/2 cups cheddar cheese, 1/2 cup Gruyère (or 1/4 cup Pecorino Romano), and the breadcrumbs over the top. Bake until golden brown, about 30 minutes (though we needed a bit more time to get it brown, but your oven may vary). Transfer the dish to a wire rack for 5 minutes; serve.

Friday Highlights

*Heading into Insanity Week #6. Want to know my motivation, besides Daniel of course, and a new VS swimsuit-reward? We'll go old school SAT prep on this one. Carrot to Mule. Chocolate milk to Bonnie. Oh, and I'm stubborn as a...get it? Dang, I'm good.
*80s Video Dance Attack downtown with some friends.

*So thirsty afterwards, we had to hit up the BK Lounge. Dr. Pepper and french fries at midnight. We felt a little Jersey Shore-ish. (What is up with them eating burgers at 3AM?) Ok. Secret is out. We watch the Jersey Shore. I'm in love with it and I don't care who knows!

Saturday Highlights

*A rooster, aka Daniel's BFF, woke us up at the crack of dawn (11:30 AM), inviting us to lunch with his family.
*We spent a beautiful afternoon in the city. Hello sunshine in Portland, in February!

* Quick shopping trip to H&M. I lost my sweater last night while busting a move on the dance floor, so I had to get it replaced. I tried to tell Daniel the pockets had been full of precious jewels and priceless accessories. Oh, and another sweater. He didn't believe me. So, just one little sweater-replacement for me. Thanks Peep!


Sunday Highlights

*Wearing my new feather earrings from Glass Cocoon. Thanks again Lindsi!

*Church service at The Well. I so appreciate honest community and the power of restoration.
*Tag-teaming it up at the grocery store with Daniel. Our fridge is so colorful again!
*Just being together the rest of the day.

oh hey. a monday highlight too.


6 months ago today, I was swept off of my feet. literally.
{metaphorically. beautifully.}
I've been floating on air ever since.

Saturday Post, What?

Quick {and completely random} little post today. I don't know, it just felt right. Today the sun was shining, birds were,(probably), chirping somewhere and we spent a fabulous afternoon in the city. Here are two tiny things I'm smiling about today and they might make you smile too.

Friday Favorites: 100 Celebration



Today I am welcoming Friday with open arms, a hug, and a kiss.
We have something fun planned for tonight, but I'll have to tell you later. Oops.
I have something I can tell you now though. Opa!

When I first started this blog-land adventure, my readers primarily consisted of my husband and grandparents, (hi family!). Here I am a few weeks later and so excited to see how this space continues to evolve into something that truly represents "me" and "him" and "us" and "etc." Life in this world.
